Serves 10 guests

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Place all the components inside a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. After that, turn off the heat and leave to reach room temperature completely. Transfer to a sterilised bottle, seal and store in the fridge, it can be stored for about one month.

For the Batch Mix: Combine every spirits and syrup into a sizeable container, leave to sit for 60 minutes, then filter it preferably using cheesecloth, so it's perfectly clear.

When ready to serve: Pour 85ml from the cocktail base into a stirring glass packed with ice, and stir lightly for a minute to cool it down. Filter to a frosted cocktail glass or a similar vessel, top with the cranberries and complete it using a brief mist with the mandarin essence above the glass.
